Position Overview:
The Assistant General Manager / Bar Manager at Tacolina plays a critical
leadership role in managing both the service and bar operations, ensuring smooth day-to-day
functions, and delivering excellent guest experiences. This dual responsibility combines the
leadership required for service operations and bar management, along with supporting the overall
operational objectives of Tacolina.
Key Responsibilities:
Service Management Responsibilities:
1. Leadership & Team Development:
o Lead and motivate front-of-house staff, maintaining high service standards and
promoting a culture of respect and teamwork.
o Conduct daily pre-shift meetings, ensuring team readiness and alignment with
daily goals, specials, and updates.
o Promote ongoing staff development, helping team members improve their skills
and career growth.
2. Operational Oversight:
o Oversee service operations during shifts to ensure smooth workflow and maintain
high standards of quality and efficiency.
o Manage employee breaks, overtime, and clock-ins to optimize labor and stay
within budgetary expectations.
o Complete and review daily checklists and audits, including maintenance, health
inspection, and closing reports.
3. Guest Relations:
o Ensure excellent guest service and handle complaints or concerns professionally,
ensuring guests have an outstanding experience.
o Assist in maintaining guest connections, fostering positive relationships that
support BPO’s reputation and return business.
4. Scheduling & Labor Management:
o Oversee staff scheduling, managing requests and changes through systems like
HotSchedules.
o Ensure adequate coverage while minimizing labor costs, adjusting for busy times
and peak shifts.
5. Training & Staff Development:
o Support recruitment and onboarding for new service staff.
o Conduct ongoing training to ensure all team members uphold service standards
and follow procedures.
6. Cash & Inventory Management:
o Oversee cash handling procedures, ensuring accuracy in reconciliation.
o Manage inventory and ordering for service-related items, minimizing waste and
controlling costs.
Bar Management Responsibilities:
1. Bar Operations:
o Oversee bar staff, ensuring high standards in cocktail preparation, service speed,
and guest interaction.
o Ensure compliance with local and state regulations regarding alcohol service,
cleanliness, and safety standards.
2. Drink Menu Development:
o Collaborate on drink menu creation and updates, ensuring offerings are
innovative, seasonal, and aligned with guest preferences.
3. Bar Inventory & Ordering:
o Manage bar inventory, place orders, and ensure that stock levels meet operational
needs without excessive overstocking.
o Track beverage costs, ensuring efficient use of ingredients while maintaining
drink quality.
4. Training & Staff Supervision:
o Supervise and mentor bar staff, fostering a positive and efficient work
environment.
o Provide training on drink recipes, bar procedures, and customer service
expectations.
5. Guest Engagement:
o Ensure an exceptional guest experience in the bar area, addressing any concerns
and promoting an inviting atmosphere.
6. Compliance & Safety:
o Monitor and maintain compliance with health and safety regulations, including
alcohol service and food handling.
o Ensure all staff are trained on responsible alcohol service and handling.
General Responsibilities:
• Assist in monthly inventory counts and ordering processes for both beverage and service
supplies.
• Complete daily operational checklists, including health and safety inspections, labor
audits, and financial reconciliation.
• Act as a point of contact for maintenance issues, scheduling repairs, and managing
service requests.
• Support hiring, onboarding, and training of new employees, ensuring all staff meet BPO
standards.
• Manage staff discipline when necessary, following established protocols for performance
and behavior management.
